Our best baking days are still ahead of us. This is my recipe for a fat-free banana loaf that will give you a tasty 'hug' and boost your energy levels at your favourite snack o'clock time of day.

Ingredients
200gr wholemeal flour 1.5tsp baking soda Pinch of salt 320gr fat free yoghurt 240gr demerara sugar 2 eggs 3 ripe large bananas, mashed |
Method
- Preheat your oven to 180°C. Line a loaf pan with baking parchment.
- Mix flour, baking soda and salt in a bowl.
- In a separate bowl, beat yogurt and sugar together until fluffy.
- Add eggs one at a time to the yoghurt mixture. If you like banana distributed evenly through your loaf, mix it in now.
- Fold the flour mix into the wet ingredients. (Fold bananas in now, if you didn't do this in the previous step).
- Scrape the banana batter into the loaf tin and bake for 60 minutes.
- Serve on its own or toasted and buttered.
